Happy New Year! Sorry for being MIA lately. I've been adjusting to non-vacation life again. I do have a couple more holiday events to share, but in the meantime, here's the one and only thing I've cooked in the past week.
I definitely haven't been to the grocery store since I've been home. But we did have some pie crusts in the freezer, some eggs and of course, cheese. I perused the freezer for useable veggies and came up with a quiche. Specifically, quiche with spinach, bacon and vermont cheddar. I followed my basic recipe, substituting onions with shallots.
Later in the week, I made a grilled cheese with the rest of my bacon and cheddar. Oh yes, I did.
Are you back in the groove yet? What are your New Year's Resolutions? So far this year, I haven't taken the elevator at work (I'm on the 7th floor). So I'm allowed to have some bacon.
