Shania HATES chicken salad

Tonight, neither of us were feeling too hungry, but I've got a long day of airports ahead of me, so I knew I needed something. We decided to finish off the bag of spinach from the other night, and the gorgonzola left over from our grilled cheese dinner. Throw in some grilled chicken, toasted walnuts and whip up a little balsamic-lemon dressing and we've got ourselves a pretty tasty and healthy salad! And you know those packets of dried fruit that they give you at Starbucks that go with the oatmeal? We threw some of those in too!


Grill some chicken with a clove of crushed garlic. We only used two of these for our salad. The rest will get lunched tomorrow.


Toast some walnuts in olive oil. We did about a 1/2 cup...


Now to the dressing. Use whatever you like, but be sure to taste and add as you go. For our dressing, Sanne whisked together 3/4 cup olive oil, 3T honey...


3T balsamic vinegar, salt and pepper, and a little oregano.

chop your nuts and slice your chicken


Drizzle dressing and toss.

pardon the shadows, turns out we were hungry after all.

Does anyone make their own dressing? Any surprising ingredients we should try next time?

  2. Yeah right! I couldn't even let your mom feed my pet store mouse to the school snake. There's no way I'm eating my backyard chicken. At least not from the first brood.
