Making Masala

Tonight is more of a review than a how-to.



I found this sauce in the ethnic food section of Shaw's, and am hoping to find a cheaper alternative to one of my favorite take out entrees, Chicken Masala.

























I started by sautéing 2 cloves chopped garlic and 1 small chopped yellow onion in olive oil. Then I added 2 chicken breasts, chopped into bite-sized pieces. I tossed in some salt and pepper, chili powder and curry for flavor, and about a cup or so of some leftover frozen vegetables that we had in the freezer.




Once the chicken was cooked through, I added the sauce. The instructions say to add 1/2c water, but I used coconut milk instead.

I let that simmer for about 10 minutes or so, so that all the flavors infused and my rice could finish cooking...




Its pretty good. Next time, I would probably let the chicken marinate in lots of spicy spices. It's no Annapurna, but in a pinch, it'll do.
